Ingredients
- 4 zucchini (spiralized)
- 1 tablespoon olive oil
- 2 garlic cloves minced
- 2 cups of chopped tomatoes
- 2 tablespoons of capers
- 1/4 cup ripe olives sliced
- 1 teaspoon dried oregano
- 1/8 cup dried tomatoes chopped
- 1/4 teaspoon red pepper flakes
- 1 tablespoon fresh lemon juice
- salt & pepper to taste
- 1/3 cup basil leaves sliced thinly
- 1/2 cup feta cheese (Optional if you are trying to watch your calorie intake or have dairy intolerance)
Instructions

- Begin by getting your veggies ready. Spiral cut the zucchini and set aside in a large container
- In a large skillet heat the oil over medium-high heat. Add then tomatoes and garlic and saute until tomatoes have softened, about 5 minutes.
- Add the rest of the ingredients except for the basil and feta and cook another 5 minutes.
- Toss the sauce with the zucchini, add feta cheese and basil then stir
- Serve immediately
