Ingredients 

  • 4 zucchini (spiralized)
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 2 cups of chopped tomatoes
  • 2 tablespoons of capers
  • 1/4 cup ripe olives sliced
  • 1 teaspoon dried oregano
  • 1/8 cup dried tomatoes chopped 
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh lemon juice
  • salt & pepper to taste
  • 1/3 cup basil leaves sliced thinly
  • 1/2 cup feta cheese (Optional if you are trying to watch your calorie intake or have dairy intolerance)

Instructions

    1. Begin by getting your veggies ready. Spiral cut the zucchini and set aside in a large container
    2. In a large skillet heat the oil over medium-high heat. Add then tomatoes and garlic and saute until tomatoes have softened, about 5 minutes.
    3. Add the rest of the ingredients except for the basil and feta and cook another 5 minutes.
    4. Toss the sauce with the zucchini, add feta cheese and basil then stir
    5. Serve immediately
